- You can make them with just pumpkin, or pumpkin and peanut/almond butter...just substitute the amounts for which ingredients you are leaving out...
- You can substitute mushroom powder in place of carob... lighter mushroom powder will give a blonde chocolate color, darker ones w I'll give a rich chocolate color
Gelatin Bunnies π°
- Bunny molds
- Beef Gelatin
- Fruit for color...I used pureed watermelon for the pink ones, puree blueberries for the blue/purple ones and a pinch of food grade tumeric for the yellow ones
- For clear color gummies heat the water (you can also use decaffeinated green tea, lemon balm tea, Dandelion Root tea, etc)
- For dense colors use room temperature water...this one will set up quicker
- For each cup of liquid add 4 tablespoons of beef gelatin...wisk thoroughly to make sure all gelatin powder is dissolved (I find it's easier to work in a tablespoon at a time)
- Divide the gelatin mixture into smaller containers and add the different colors, wisking to thoroughly mix
- Spoon each color into molds and refrigerate for 2-3 hours
- Pop bunny gummies out of molds...you will want a bright coloured one for the peek-a-boo egg
Peek-a-boo Egg
- Egg mold (with flat bottom so it will stand up)
- Beef gelatin
- Chopped greens for grass (spinach, collard, mustard, turnip or dandelion)
- 1/2 cup water (or tea from bunnies above) cool water makes dense color, heated water makes clear color
- Wisk 2 tablespoons of beef gelatin until dissolved
- Fill bottom half of egg and place in fridge for about 1 hour, or until firm
- Take bottom half of egg out of fridge, sprinkle chopped greens for grass over top, then take one of gummy bunnies and place in the middle off the greens...
- Now the bunny probably won't stand up by himslef so hold onto him while you spoon a little more liquid beef gelatin over the top of the greens and around the bottom of the bunny...once the bunny stands by himself place in fridge to set...this will hold greens and bunny in place when you turn him upside down to complete the egg...leave in fridge for about an hour
- Make another 1/2 cup heated water (the top should be clear) and wisk in 2 tablespoons of gelatin
- Take the bottom of the egg out of the fridge and turn upside down to make sure greens and bunny are "stuck"
- Fill the top of the egg mold with the clear beef gelatin...do this over a plate or bowl because the gelatin will leak
- Turn the bottom upside down and insert into the top... making sure it fully seals...
- Turn right side up and return to fridge for 2-3 hours
- When fully gelled (better to wait too long than to take apart before it's fully gelled) remove from fridge...gently remove top mold...if it comes apart don't panic...remove bottom mold...hopefully you'll have a complete egg that stands up ... if it came apart just stand the bottom part where you want it, put the top on and then put back in fridge for an hour out so...
