Cauliflower Tortillias ๐ŸŒฎ

  • Ingredients:
    • 1 cup riced cauliflower
    • 1 large egg

Instructions:

  • Preheat the oven to 375℉., and line a baking sheet with parchment paper.
  • Cook riced cauliflower according to package instructions. When cooked place the cauliflower in a fine cheesecloth or thin dishtowel and squeeze out as much liquid as possible, being careful not to burn yourself. 
  • In a medium bowl, whisk the egg. 
  • Add in cauliflower. 
  • Mix until well combined. 
  • Spoon cauliflower mix onto parchment paper with table spoon, shaping into round shape.  Makes approx 5 3" x 3" tortillas.
  • Bake for 10 minutes, carefully flip each tortilla, and return to the oven for an additional 5 to 7 minutes, or until completely set. Place tortillas on a wire rack to cool slightly. Store in fridge until ready to use, not more than 3 days.


Chicken Mushroom Quesadilla: 

  • I used maitake and shiitake mushrooms, but feel free to use whatever mushrooms are available to you.
  • For the tortillas, I made the cauliflower tortillas above.  When ready to make quesadillas, heat a medium-sized skillet on medium. Place a baked tortilla in the pan, pressing down slightly, and brown for 1 to 2 minutes on each side. Repeat with remaining tortillas.


Filling Ingredients:

  • 8 oz pre-cooked shredded chicken breasts 
  • 8 oz mushrooms (we used shiitake and maitake) if dried soak overnight, if fresh sautee in olive oil till soft before using.
  • 4 oz goat cheese (shredded is easiest)
  • A couple of handfuls of spinach
  • 5 of the cauliflower tortilla wraps
  • 1-2 Tbs olive oil
  • Optional booster - 1 teaspoon Real Mushrooms Lion’s Mane
  • Top and serve with goat milk yogurt 


Instructions:

  • In a skillet, heat 1/2 TB olive oil over medium heat.
  • Add your chicken and mushrooms and cook until tender. About 5 minutes.
  • Add Lion’s Mane powder, and spinach. 
  • Mix and keep on the heat until the spinach is slightly wilted.
  • Move chicken/mushroom/spinach mixture into a separate bowl.
  • Wipe the pan clean if you need. 
  • Heat 1/2 TB of olive oil in the pan over medium heat.
  • Place a tortilla on the pan and cook for about a minute.
  • Flip the tortilla with a spatula and spread a thin layer of your cooked chicken mushroom mixture over half of the tortilla, sprinkle a small amount of goat cheese on top, and then gently fold the other side on top, like a taco. Then, flip and cook about 1-2 mins, the cheese should be melted.
  • Remove the quesadilla and place it on your pup`s plate and top with a tablespoon of yogurt!


Servings:

  • 5 small, aprox 1-1/2" x 3", quesadillas (serving size depends on size of pup)
  • Prep Time: 5 minutes
  • Cook Time: 15-20 minutes
