Individual Pup Turkey King Cakes

Preheat oven to 350

Ingredients 

  • 1 lb lean ground turkey (99/1% for low fat)
  • 1/2 cup coconut flour/oat flour for low fat (coconut flour is a great mostiure absorber so if "dough" is too wet add a bit more coconut flour, if it's too dry add a bit of water, until it will hold the shape of the cake)
  • 1 tsp celon cinnamon 
  • 1/8 cup ground flax seed soaked in 1/4 cup water
  • 1 egg


Instructions 

  • Mix all ingredients together in a bowl
  • Cover baking sheet with parchment paper
  • Separate into handfuls
  • Shape into oval with hole in the middle (I did approx 5" x 3") 
  • Bake 60 mins at 350 gently flipping approx 1/2 way through using spatula (like any cake it may break if not handled gently)
  • Check to make sure turkey is fully cooked, if not cook for additional 15 mins at a time until done

While cooling make "frosting"

  • Food colors (2 tbs of Greek yogurt for each color)
  • Green - 1/8 cup frozen chopped spinach boiled in 1/8 cup water to get a good green water, cool and add with yogurt in small food processor to blend
  • Red - small handful of blueberries thawed and pureed then mixed with Greek yogurt 
  • Yellow - approx 1/4 tsp ground food grade tumeric mixed with Greek yogurt 


When cakes are cooled transfer to plate with spatula and frost with colored "frostings"
